Honeycomb 
SERVES: lots!
COOK: 10 minutes
PREPARATION: 5 MINUTES


This is something we saw being made on Masterchef and Daniel thought he would have a go! 




Ingredients 
365g caster sugar
140g glucose
110ml water
1 tsp bicarbonate of soda





Method










Place sugar in a saucepan with glucose (use damp fingers to scoop it into the pan) and the water, then place the pan over high heat until the sugar dissolves. Brush down the sides of the pan with a wet pastry brush to prevent sugar crystals forming. Swirl pan to dissolve sugar. Once sugar has dissolved, wait for the bubbles to slow down and for the mixture to take on a faint golden tinge.

Line a large bowl with baking paper and have a whisk ready. Add the bicarb and quickly whisk vigorously, then immediately pour into the lined bowl. Set aside to set for 45 minutes.

Daniel's Notes 

The timing can be quite tricky, the first time I made this it didn't set because I didn't cook the caramel long enough before adding the bi-carb.

The 2nd time I cooked for a lot longer and got a much stronger caramel colour before I added the bi-carb. It set beautifully! 
go by smell as well, if it is smelling like it is burning ...then it is! and will taste revolting!

Last tip, the glucose is REALLY sticky so use wet fingers when handling it.








Drunken Dancing Roast Chicken!


SERVES: 4 
PREPARATION: 30 MINUTES
COOKING: 2 HOURS






Ingredients

1 whole chicken
1 can Bourbon & Coke, reserve 2 tbs from can
Potatoes
Pumpkin 
Carrots 
Onions 
Olive Oil
salt & pepper
Rosemary, chopped
corn & peas
gravy 







Method


Heat hooded BBQ to 200C


Insert OPENED can of Bourbon & Coke into chickens butt & stand in roasting tray, rub with reserved 2 tbs bourbon & coke. 


throw peeled & chopped vegies into roasting trays, lightly coat with olive oil, season with salt & pepper & sprinkle with chopped rosemary. 


Put all the roasting trays into the BBQ, shut lid.


Check every half hour or so until ready and rest the chicken for 10 minutes before carving. 


Boil the frozen peas & corn & make the gravy from the packet. 


voila, drunken dancing chicken! yum!




Daniel's Notes 


You can do this in a normal oven... apparently but that would be woman's work.

You can pretty much use a can of anything you like, beer, lemon squash, vodka & lemon, the taste goes right through the chicken. Bourbon & coke is my fave because the chicken goes all sticky and crispy. delicious.
